Diane's Warm Potato Salad | ||

lb Bacon, diced
2 lbs Potatoes, skins on cut in bite size chunks 1 large Spanish Onion, diced 2 Cloves garlic, minced Freshly Ground Pepper to taste Salt to taste (potatoes always need salt, but the bacon adds salt so be careful of over salting) 2 Tablespoons Sugar 1/2 Cup Cider Vinegar (or more to taste)
Preheat oven to 350°. Place bacon in bottom of 10x13 inch baking dish. Toss potatoes, onion and garlic together. Spread on top of bacon. Sprinkle liberally with freshly ground pepper and salt to taste. Bake for 1 hour 15 minutes or until potatoes are fork tender. Stir and toss at the 30 minute and 1 hour mark. When done, immediately sprinkle sugar and pour vinegar over the hot potato mixture. Taste for seasoning and add more vinegar as needed. Serve hot or let cool to room temperature. You can make it to this point and refrigerate. Warm in oven or microwave when ready to eat. Add more vinegar if necessary. |
