Diane's Thai Shrimp and String Beans

1 pound (or more) fresh string beans
2 pounds large shrimp shelled but tails left on
2 tablespoons vegetable oil
1 large onion
3 tablespoons yellow curry paste (I have quite a few sources if you need it)
2 tablespoons POW Concentrated Soup Mix (from the ingredient store (http://tinyurl.com/6u59n))
1 1/2 cups boiling water
1 tablespoon butter

Bring large pot of water to boil. Add salt to water and then add string beans and boil 3 minutes. They should be crisp and very green. Remove to a large serving bowl.

Sauté onion in a large fry pan over low heat in the vegetable oil. Do not wilt, just sauté lightly. It should still have a crunch and not be brown. Add curry paste to onion/oil mix and using a wooden spoon mix it into the onion/oil.

Put shrimp in the large pot of boiling water. After 2 minutes remove with a slotted spoon and add to frying pan. Toss to coat with the curry. Dissolve the POW with 1 1/2 cups of boiling water and add to the frying pan. Bring to a boil and turn off heat. Add butter to pan and toss to melt butter and coat shrimp with sheen. Pour over the string beans in the large serving bowl.

Serve with rice.
